  • 4 medium potatoes, diced Use any kind you have on hand.

  • 4 cups chicken broth Can substitute with vegetable broth.
  • 1 cup heavy cream Use a lighter alternative if desired.
  • 2 cups kale or spinach For added nutrition.

Cooking the Soup

  • In a large pot over medium heat, add the Italian sausage. Cook until browned and crumbly, about 5-7 minutes. Break it apart as it cooks.
  • Once the sausage is cooked, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  • Add the diced potatoes and chicken broth. Bring to a gentle boil, then reduce the heat and let simmer for about 15 minutes, or until the potatoes are fork-tender.
  • Stir in the heavy cream, kale or spinach, and season with salt and pepper. Let the soup simmer for another 5-10 minutes until the greens are wilted and everything is heated through.
  • Ladle the soup into bowls, sprinkle with grated Parmesan cheese, and enjoy!

Notes

This soup freezes wonderfully, making it perfect for meal prep. You can also swap out greens based on what you have at home.
