Ingredients
  

Salad Base
  • 3 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ½ cup black olives, sliced optional
  • ½ cup pepperoncini, sliced
  • ¼ cup fresh parsley, chopped
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • to taste salt
  • to taste pepper
  • optional Grated Parmesan cheese to top

Method
 

Preparation
  1. Chop the romaine lettuce into bite-sized pieces and place it in a large salad bowl.
  2. Add cherry tomatoes, cucumber, red bell pepper, and red onion to the bowl.
  3. Mix in the black olives and pepperoncini.
  4. Sprinkle the freshly chopped parsley over the salad.
Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
Serving
  1. Drizzle the dressing over the salad and toss gently to combine.
  2. Optionally, sprinkle some grated Parmesan cheese on top before serving.

Notes

For an extra refreshing experience, chill the salad in the fridge for about 30 minutes before serving. Feel free to swap in favorite crunchy veggies or add protein like grilled chicken or chickpeas.
