Ingredients
  

For the Banana Cake

  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1.5 cups all-purpose flour
  • a pinch salt

For the Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • a splash milk To thin out the frosting if needed.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, then mix in the mashed bananas and vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the banana mixture, stirring until just combined.
  • Pour the batter into a greased 9x13 inch baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, let the cake cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.

Frosting

  • While the cake cools, beat together the softened cream cheese and butter until creamy.
  • Gradually add the powdered sugar and mix until smooth. Stir in the vanilla extract and a splash of milk for desired consistency.
  • Once the cake has cooled, frost it generously with the cream cheese frosting.

Notes

Use overripe bananas for sweetness and flavor. Add crushed walnuts or pecans into the frosting for extra texture.
