Ingredients
  

For the Cake

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • cup milk
  • 2-3 pieces ripe peaches, pitted and sliced Don’t skimp on those peaches!

For the Topping

  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter Because butter makes everything better!

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Mixing Batter

  • In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the creamed mixture, alternating with milk until well combined.

Adding Peaches

  • Gently fold in the sliced peaches.

Topping and Baking

  • Pour the batter into the prepared pan.
  • In a separate bowl, mix the brown sugar and cinnamon for the topping, then sprinkle over the batter and drizzle with melted butter.
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick comes out clean.

Cooling and Serving

  • Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
  • Slice and serve warm, optionally adding a dollop of whipped cream.

Notes

Make sure your peaches are perfectly ripe. Adapt the recipe by using other fruits if desired, such as nectarines or berries.
