  • 3 medium-sized apples (Granny Smith or any tart apple) Peeled, cored, and sliced
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 piece zest of lemon For added flavor

  • ½ cup rolled oats Mixed with ¼ cup brown sugar
  • ¼ cup brown sugar Mixed with ½ cup rolled oats

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Peel, core, and slice the apples about ¼ inch thick.
  • Toss the apple slices with a bit of cinnamon and sugar, and set aside.
  • In a mixing bowl, combine the flour, baking powder, cinnamon, and salt.

Mixing

  • In another bowl, cream the softened butter and granulated sugar together until fluffy and pale, about 2-3 minutes.
  • Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract and lemon zest.
  • Gradually add in the dry ingredients to the wet mixture until just combined.

Baking

  • Fold in the apple slices gently until mixed in.
  • Grease a 9-inch round cake pan, spread the batter evenly, and sprinkle the topping over the cake if using.
  • Bake for 45 minutes or until golden brown and a toothpick inserted into the center comes out clean.

Cooling and Serving

  • Allow the cake to cool for about 10 minutes before transferring it to a wire rack.
  • Serve warm with whipped cream or vanilla ice cream.

Notes

Apples will transform into a sweet filling during baking. Use a toothpick to check for doneness; a few crumbs means it's perfect!
