Ingredients
  

Main Ingredients

  • 2 fillets salmon fillets
  • 1 cup fresh pineapple chunks Canned pineapple can be used if needed.
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • to taste Fresh basil or cilantro For garnishing, optional.

Preparation

  • Pat the salmon fillets dry with a paper towel and season both sides lightly with salt and pepper.

Marinade

  • In a bowl, combine honey, soy sauce, lime juice, and minced garlic. Whisk until well mixed.
  • Place the salmon fillets in a shallow dish, pour the honey mixture over them, and toss in the pineapple chunks. Let them marinate for about 10–15 minutes.

Cooking

  • In a skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down and cook for about 4–5 minutes on each side, or until the salmon flakes easily.
  • During the last minute of cooking, toss in the marinated pineapple chunks to caramelize them.

Serving

  • Serve the salmon topped with warm pineapple and garnish with fresh basil or cilantro.

Notes

Don’t overcook the salmon; it can dry out quickly. For a twist, try adding other fruits like mango or peach.
