  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans

Optional Topping

  • to taste flaked sea salt for topping

Preparation

  • Preheat the oven to 350°F (180°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Mix in the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, stirring just until combined.
  • Gently fold in the chopped pecans.
  • Using a cookie scoop or tablespoon, drop mounds of dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Sprinkle flaked sea salt on top while still warm, if desired.

Notes

For chewier cookies, chill the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
