Apples

  • 6-8 medium-sized medium-sized apples (Granny Smith, Honeycrisp, or your favorite)

Sugars and Seasonings

  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon cornstarch for thickening
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Peel, core, and slice the apples into thin wedges.
  • In a large mixing bowl, combine the brown sugar, granulated sugar, lemon juice, cinnamon, nutmeg, cornstarch, and salt.
  • Toss the sliced apples into the sugar mixture and gently fold until well-coated.

Cooking

  • Transfer the apple mixture to a large saucepan over medium heat.
  • Cook for about 10-15 minutes, stirring occasionally, until the apples soften and juices bubble.
  • Stir in the vanilla extract and adjust sweetness if needed.
  • Remove from heat and let cool completely before using.

Notes

This filling can be stored in an airtight container in the refrigerator for up to a week, or frozen for several months. You can swap some apples for pears or add caramel or pecans for extra flavor. Use more cornstarch for a thicker filling.
