  • 8 oz pasta (your choice!)
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning

Vegetables and Beans

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes with green chilies

Cheese and Garnish

  • 1 cup shredded cheese (cheddar or Mexican blend)

Preparation

  • Start by boiling your pasta according to package directions in a large pot of salted water. Don’t forget to save a cup of the pasta water for later!
  • While your pasta cooks, heat a large skillet over medium heat. Add the ground turkey or beef and brown it for about 5-7 minutes or until fully cooked. Drain any excess grease.

Combining Ingredients

  • Stir in the taco seasoning, black beans, corn, and diced tomatoes. Mix until everything is well combined. Let this simmer for about 5 minutes to allow the flavors to meld.
  • Drain your pasta and add it to the skillet with the meat mixture. Stir to combine everything evenly. If it looks a little dry, add some reserved pasta water until you reach your desired consistency.

Final Touches and Serving

  • Stir in your shredded cheese until it’s melted and gooey. Trust me; this step is vital for that creamy, comforting feel.
  • Garnish with fresh cilantro if desired, and dig in! This dish is best enjoyed warm and can be accompanied by a simple side salad for a complete meal.

Notes

For extra flavor, consider roasting your corn and tomatoes in the oven for a few minutes before mixing them in. This adds depth of flavor.
