  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach (or any vegetables you prefer)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the diced chicken breast, seasoning it with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  • In the same pot, add a bit more olive oil if needed, then toss in the chopped onion and minced garlic. Sauté for about 3 minutes, until the onions are translucent and fragrant.
  • Pour in the orzo pasta and stir it around for about a minute. This will give it a nice nutty flavor.
  • Gradually add the chicken broth, Italian seasoning, and spinach. Bring the mixture to a boil, then reduce to a simmer.
  • Once the orzo is tender (usually about 8-10 minutes), return the cooked chicken to the pot. Stir everything together and let it simmer for an additional 2-3 minutes.
  • Taste and adjust the seasoning if necessary. Serve hot and enjoy your creation!

Notes

Customize it with extra vegetables or creamy additions like Parmesan cheese for an indulgent twist. Leftovers can be stored in an airtight container in the fridge for up to three days.
