  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup coconut milk
  • 1 tablespoon lemon zest
  • 1/2 cup lemon curd store-bought or homemade

Optional Garnish

  • Flaked coconut for garnish

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • In another bowl, cream the softened butter until fluffy, then beat in the egg. Gradually stir in the coconut milk and lemon zest.
  • Combine the wet ingredients with the dry mixture, mixing just until combined. Be careful not to over-mix, as we want these biscuits to be tender.
  • Scoop the dough onto the prepared baking sheet, using about a tablespoon for each biscuit. Don’t worry if they’re not perfectly shaped; a little rustic charm is part of their appeal!

Baking

  • Bake for about 12-15 minutes, or until the tops are lightly golden.
  • Once out of the oven, let them cool slightly, then add a dollop of lemon curd on top and sprinkle with flaked coconut if you like.
  • Serve warm and enjoy— you’ll be amazed at how quickly these biscuits disappear!

Notes

If your mixture feels too dry, add a touch more coconut milk— it should be moist but not sticky. For an added flavor kick, try folding in some chopped nuts or even a hint of vanilla extract. Don’t skip the resting time after baking; this allows flavors to develop even more!
