Ingredients
  

For the Crust

  • 1 ¾ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar

For the Cheesecake Filling

  • 16 oz cream cheese, softened Ensure cream cheese is at room temperature.
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs Add eggs one by one to avoid overbeating.

For the Berry Topping

  • 2 cups mixed fresh berries Combination of strawberries, blueberries, and raspberries.
  • ¼ cup sugar Adjust to taste.
  • 2 tbsp lemon juice

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until well blended. Press this mixture firmly into the bottom of a 9-inch springform pan.
  • In another bowl, beat the softened cream cheese and sugar until smooth. Add the vanilla extract, then mix in the eggs one by one.

Baking

  • Pour the cheesecake filling over your prepared crust in the springform pan. Bake for about 50-55 minutes or until the center is slightly jiggly. Let it sit at room temperature for about an hour and then chill it in the fridge for at least 4 hours or overnight.

Topping

  • Just before serving, toss your mixed berries with sugar and lemon juice in a bowl. Let them sit for about 10-15 minutes until juices start to release.
  • Once your cheesecake has chilled and set, run a knife around the edge of the springform pan and release the sides. Top with your berry mixture just before serving.

Notes
