  • 3-4 pieces ripe bananas The riper the bananas, the better the flavor.
  • 1 cup granulated sugar
  • 2 large eggs Can be substituted with flax egg or applesauce.
  • 1/3 cup melted butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 ½ cups all-purpose flour
  • 1 cup walnuts, roughly chopped Can be omitted or substituted with chocolate chips.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in sugar, eggs, melted butter, and vanilla extract into the mashed bananas until well combined.
  • Sprinkle baking soda and salt over the batter, then gently fold in the flour. Be careful not to overmix.
  • Fold in the chopped walnuts.

Baking

  • Pour the batter into the prepared cake pan. Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Dust with powdered sugar if desired before serving.
