  • 2 lbs potatoes (russet or Yukon Gold) Peeled and diced.
  • 1 each onion, chopped Essential for flavor.
  • 2 each carrots, diced For color and nutrition.
  • 2 sticks celery, diced Adds crunch.
  • 4 cups vegetable or chicken broth Homemade is preferred.
  • 1 cup heavy cream For a creamy finish.
  • to taste Salt Classic seasoning.

Optional Toppings

Instructions
 

Preparation

  • Peel and dice the potatoes. Chop the onion, carrots, and celery.

Cooking

  • Combine all ingredients including broth in the crockpot and stir well.
  • Add salt and pepper to taste.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours.

Finishing Touches

  • Stir in heavy cream. For a thicker soup, mash some of the potatoes in the pot.
  • Ladle into bowls and add your favorite toppings before serving.

Notes

You can prep vegetables the night before and store them in the fridge. Customize by adding other vegetables like spinach or corn.
