Ingredients
  

Vegetables

  • 1 head green cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced

Liquid Ingredients

  • 6 cups vegetable broth (or chicken broth if you prefer)
  • 1 can diced tomatoes, undrained (14.5 oz)

Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Optional Garnish

  • chopped fresh parsley for garnish

Instructions
 

Preparation

  • In a large pot, drizzle a little olive oil and heat it over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for about 5 minutes until they start to soften.
  • Stir in the garlic and sauté for another minute. Be careful not to burn it.
  • Toss the chopped cabbage into the pot.

Cooking

  • Add the vegetable broth and the can of diced tomatoes, giving it a good stir.
  • Sprinkle in the thyme, paprika, salt, and pepper. Let it simmer on low heat for about 30 minutes, without stirring.
  • After half an hour, taste and adjust the seasoning if necessary.

Serving

  • Ladle the soup into bowls and garnish with chopped fresh parsley if desired.

Notes

Add some protein by incorporating cooked beans or chicken for a heartier meal. Use pre-chopped veggies to save time. The soup's color may be brown, but it’s still delicious!
