  • 2 pieces ripe bananas The riper the bananas, the sweeter your cookies will be.
  • 1 cup rolled oats You can pulse in a blender for a mix of fine and coarse textures for chewiness.
  • 1/4 cup honey or maple syrup Can substitute with other sweeteners like agave nectar or date syrup.
  • 1/2 teaspoon cinnamon
  • a pinch salt

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a baking sheet lined with parchment paper.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Add the oats, honey (or maple syrup), cinnamon, and salt to the mashed bananas. Mix until well combined. If desired, add chocolate chips or nuts.

Baking

  • Use a spoon or cookie scoop to drop tablespoon-sized portions of the dough onto the prepared baking sheet. Slightly flatten them as they won't spread much while baking.
  • Bake for 10-12 minutes, or until the cookies are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container for up to a week. These cookies freeze beautifully.
