Ingredients
  

Batter Ingredients

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or agave syrup Can substitute with maple syrup.
  • 1/2 cup almond milk Can use any milk of your choice.
  • 1 tsp vanilla extract

For Rolling

  • 1/4 cup coconut sugar For rolling the baked churro bites.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine whole wheat flour, baking powder, cinnamon, and salt.
  • In another bowl, mix together melted coconut oil, honey (or agave syrup), almond milk, and vanilla extract.
  • Slowly pour the wet ingredients into the dry ingredients and stir until just combined.
  • Lightly grease a mini muffin tin, filling each cup about halfway.

Baking

  • Bake for about 12-15 minutes until golden brown.
  • Mix coconut sugar and extra cinnamon together.
  • Once baked churro bites are cool, roll them in the coconut sugar mixture.

Notes

Store leftovers in an airtight container for up to three days at room temperature or in the fridge for a week. Can be frozen for later use.
