Broth Base

  • 4 cups vegetable broth

Main Ingredients

  • 3 tablespoons miso paste Use white or yellow for a milder flavor
  • 1 tablespoon fresh ginger, finely grated
  • 1 tablespoon fresh lemon juice About 1 lemon
  • 1 clove garlic, minced
  • 2 stalks green onions, chopped
  • 1 cup kale or spinach, chopped Feel free to mix things up!
  • sesame seeds For garnish
  • chili flakes Optional, for extra heat

Preparation

  • Start by bringing your vegetable broth to a gentle simmer in a large pot.
  • In a little bowl, mix the miso paste with a few tablespoons of hot broth until it dissolves, then add this mixture back into the pot.
  • Toss in your grated ginger and minced garlic, stirring to combine.
  • Squeeze in that fresh lemon juice.
  • Stir in the chopped kale or spinach and let it simmer for another 5 minutes until the greens are tender but still vibrant.
  • Ladle your broth into bowls, sprinkle with chopped green onions and sesame seeds, and if you’re feeling spicy, add those chili flakes.

Notes

You can substitute miso with soy sauce or tamari if needed. Store leftovers in an airtight container in the fridge for up to a week. To make it spicier, add more ginger or sriracha before serving.
