Ingredients
  

Broth Base

  • 4 cups vegetable or chicken broth
  • 2 cloves garlic, minced
  • 1 inch piece ginger, thinly sliced
  • 1 tablespoon soy sauce (or tamari for gluten-free)

Main Ingredients

  • 200 g rice noodles
  • 1 cup fresh vegetables (like spinach or bok choy)

Garnish

Preparation

  • In a pot, combine the vegetable or chicken broth, sliced ginger, and minced garlic. Bring to a gentle simmer over medium heat.
  • Stir in the soy sauce. Adjust to taste.

Cooking Noodles

  • In a separate pot, cook the rice noodles according to the package instructions, usually around 4-6 minutes. Drain and set aside.

Combine and Serve

  • Add the fresh vegetables to the broth and let them simmer for about 2-3 minutes until slightly tender.
  • Add the cooked rice noodles to the pot and stir gently. Season with salt and pepper as needed.
  • Ladle the broth into bowls and top with green onions.

Notes

For a spicier broth, add chili flakes or sliced jalapeƱos. Feel free to use any leftover veggies for extra flavor.
