  • 1 cup buttermilk
  • 0.5 cups vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg egg
  • 1 cup boiling water

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt. Whisk these together until fully blended.
  • In a separate bowl, mix the buttermilk, vegetable oil, vanilla extract, and egg. Once combined, slowly add this mixture to the dry ingredients.
  • Stir in the boiling water to the batter until well mixed. The batter should be thin.
  • Line your muffin tin with cupcake liners and fill each about 2/3 full with batter.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool in the pan for 10 minutes, then remove them to a wire rack to cool completely before frosting.
