Ingredients
  

For the shrimp

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder

For the wraps

  • 4 large tortillas (flour or whole wheat)
  • 1 cup fresh mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, sliced
  • ½ cup creamy ranch or tzatziki sauce (or any sauce you love!)

Preparation

  • In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Mix well.

Grilling

  • Fire up your grill or grill pan over medium-high heat.
  • Add the seasoned shrimp to the grill, cooking for about 2-3 minutes per side until they turn pink and opaque.

Assembly

  • Lay your tortillas on a flat surface. Start with a handful of salad greens, add a few shrimp, a sprinkle of cherry tomatoes, and avocado slices. Drizzle the creamy sauce on top.
  • Fold in the sides of the tortilla and roll it up tightly. Cut in half if desired.

Notes

For extra flavor, marinate the shrimp for 30 minutes before cooking. Customize your wraps with other fillings like black beans or shredded cheese. Leftover shrimp can be tossed on salads or in pasta the next day.
