  • 1 pound fresh cleaned squid, cut into rings
  • 3 tablespoons olive oil because who doesn't love a little drizzle?
  • 2 tablespoons lemon juice freshly squeezed makes all the difference
  • 2 cloves garlic, minced because garlic is love
  • 0.25 cup fresh cilantro, chopped for that herby goodness
  • to taste salt just a pinch, please
  • to taste black pepper because life needs a little kick
  • lemon wedges, for serving to give your calamari that final zing

Instructions
 

Preparation

  • Rinse the calamari under cold water and pat them dry with a paper towel.
  • In a large bowl, combine the olive oil, lemon juice, minced garlic, and chopped cilantro. Toss in the calamari rings, season with salt and pepper, and mix well. Let it marinate for about 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Thread the marinated calamari rings onto skewers and place them on the grill. Cook for about 2-3 minutes per side until they are opaque.

Serving

  • Remove the calamari from the grill and place them on a serving platter. Squeeze fresh lemon juice over the top and garnish with additional cilantro if desired.
  • Serve hot with lemon wedges on the side.

Notes

Don’t overcook the calamari as it will become rubbery. This dish pairs beautifully with a chilled white wine or light beer.
