A quick and delicious salad featuring balsamic-marinated grilled flank steak, mixed greens, cherry tomatoes, feta, and red onion.

Ingredients
  

For the marinade and steak

  • 1 lb flank steak can substitute with skirt steak or chicken breast
  • 1/2 cup balsamic vinegar
  • 3 tbsp olive oil plus more for grilling
  • 1 tbsp honey
  • Salt and pepper to taste

For the salad

  • 5 cups mixed greens use spinach, arugula, etc.
  • 1 cup cherry tomatoes halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion thinly sliced

Instructions
 

Preparation

  • In a bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper.
  • Place the flank steak in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and marinate in the fridge for at least 30 minutes.

Grilling

  • Preheat your grill (or grill pan) over medium-high heat.
  • Remove the steak from the marinade and let the excess drip off. Grill for about 5-7 minutes on each side, depending on your preferred doneness.

Assembly

  • Transfer the cooked steak to a cutting board and let it rest for about 5 minutes.
  • In a large bowl, combine mixed greens, cherry tomatoes, red onion, and feta cheese. Toss gently.
  • Slice the rested steak against the grain into thin strips and arrange it on top of the salad.
  • Drizzle with any leftover balsamic marinade and sprinkle with additional salt and pepper.

Serve

  • Serve immediately and enjoy your Grilled Balsamic Steak Salad!

Notes

Marinate the steak for at least 30 minutes for best flavor. You can add other veggies like avocado or grilled peppers. Keep salad and steak separate if storing leftovers.
