  • 1 pre-made pie crust 1 pre-made pie crust Homemade or store-bought
  • 1 cup 1 cup granulated sugar
  • 1 cup 1 cup shredded coconut Use unsweetened for a healthier option
  • 1 cup 1 cup whole milk Can substitute with non-dairy milk
  • 3 large 3 eggs
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 tablespoon 1 tablespoon all-purpose flour
  • 1 pinch A pinch of salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the sugar, shredded coconut, and flour.
  • In a separate bowl, gently beat the eggs until fluffy.
  • Add the beaten eggs to the sugar mixture, then pour in the milk and vanilla extract, and add a pinch of salt. Whisk until well combined.
  • Pour the mixture into the pie crust and bake for 30-40 minutes or until the top is golden brown.
  • Once baked, cool completely on a wire rack before serving.
  • Serve with whipped cream or extra coconut as desired.

Notes

You can increase the amount of coconut for a chewier texture. If the pie browns too quickly, cover with aluminum foil while baking.
