Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  • Stir in the buttermilk until just combined.
  • Turn the dough out onto a floured surface and knead gently; roll it out to about 1/2 inch thickness.
  • Use a biscuit cutter or a glass to cut out even rounds and place them on a baking sheet lined with parchment paper.

Filling and Baking

  • In a separate bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, eggs, and vanilla; mix until well combined.
  • Make a small indentation in the center of each biscuit round and spoon some of the pecan filling into each one.
  • Place the biscuits in the preheated oven and bake for about 15-20 minutes, or until golden brown and the filling is bubbly.
  • Remove from the oven and let them cool slightly before serving. Enjoy warm.

Notes

For best results, chill your ingredients and don't overmix the biscuit dough. A sprinkle of sea salt before baking can enhance the flavor.
