Ingredients
  

For the tart

  • 1 piece pre-made pastry crust Store-bought for convenience
  • 4 large golden potatoes, thinly sliced Aim for about 1/8 of an inch thickness
  • 1 cup balsamic vinegar For the glaze
  • 2 tablespoons olive oil For drizzling
  • to taste salt and pepper For seasoning
  • 2 tablespoons fresh thyme leaves
  • a dash honey (optional) For added sweetness

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small saucepan over medium heat, bring the balsamic vinegar to a simmer. Reduce for about 10-15 minutes until it thickens enough to coat the back of a spoon.
  • Slice the golden potatoes thinly, aiming for about 1/8 of an inch slices.

Assembly

  • Roll out the pre-made pastry crust into a tart pan. Drizzle with a tablespoon of olive oil, season with salt and pepper.
  • Layer the potato slices in the tart, overlapping them as desired.
  • Drizzle the remaining olive oil over the potato slices and sprinkle with fresh thyme leaves, salt, and pepper, plus a dash of honey if using.

Baking

  • Bake the tart for about 35-40 minutes until the potatoes are tender and golden-brown. Check halfway through and cover with foil if it's browning too quickly.
  • Allow the tart to cool slightly after baking, then drizzle the balsamic glaze over the top.

Notes

Don’t rush the balsamic reduction; it needs time to develop flavor. Layer the potato slices artfully for even cooking and presentation. This tart pairs well with a light salad or roasted vegetables.
