Ingredients
  

For the Chicken Schnitzel

  • 4 pieces boneless, skinless chicken breasts Pounded to 1/2 inch thickness
  • 1 cup all-purpose flour Seasoned with salt and pepper
  • 2 large eggs Whisked for breading
  • 1 cup breadcrumbs Panko works great!
  • to taste salt and pepper
  • as needed oil Cooking oil For frying

For the Creamy Mushroom Sauce

  • 1 tablespoon butter For sautéing
  • 1 cup sliced mushrooms Any kind you fancy!
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • to taste salt and pepper
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Place a chicken breast between two sheets of plastic wrap and pound it to about 1/2 inch thick using a meat mallet or rolling pin. Repeat with all chicken breasts.
  • Set up three shallow dishes: one with seasoned flour, another with whisked eggs, and the last with breadcrumbs.
  • Dip each chicken breast into the flour, then the egg, and finally coat it with breadcrumbs, pressing to ensure the crumbs stick.

Cooking

  • In a large skillet, heat enough oil over medium heat to cover the bottom. Once hot, carefully add the chicken and fry for about 4-5 minutes per side until golden brown. Transfer to a plate lined with paper towels to absorb excess oil.
  • In the same skillet, melt the butter and add sliced mushrooms. Sauté until golden, about 5 minutes, then add minced garlic and sauté for another 30 seconds until fragrant.
  • Pour in the heavy cream and Dijon mustard, stirring until well blended. Let the sauce simmer for a few minutes until it thickens slightly, and season with salt and pepper to taste.

Serving

  • Place the schnitzels on a serving platter and generously pour the creamy mushroom sauce over them. Garnish with fresh parsley.

Notes

Ensure the oil is at the right temperature for frying to maintain crispy texture. Leftover schnitzel can be refrigerated and reheated for sandwiches the next day.
