  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup gluten-free flour
  • 1 cup milk (or a dairy-free alternative)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup mixed vegetables (carrots, peas, etc.)
  • 1/2 cup onions, diced
  • 2 tbsp olive oil
  • Fresh herbs for garnish (optional)

Instructions
 

Sauté the Aromatics

  • In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until they become translucent, about 3-4 minutes.

Add the Chicken and Broth

  • Stir in the shredded chicken and pour in the chicken broth. Allow it to simmer gently for about 10 minutes.

Prepare the Dumpling Dough

  • In a mixing bowl, combine the gluten-free flour, baking powder, salt, and pepper. Gradually whisk in the milk until you form a smooth, thick batter.

Incorporate the Veggies

  • Toss in your mixed veggies to the chicken and broth sauce.

Drop in the Dumplings

  • Using a spoon, drop dollops of the dumpling batter into the simmering broth. Cover the pot and let the dumplings steam for about 15 minutes.

Notes

Don’t rush the sautéing. Letting the onions cook until they are soft brings out their natural sweetness. This dish keeps well in the fridge, making it perfect for lunch the next day.
