Preparation

  • Wash your cucumbers thoroughly and slice them thinly.
  • Peel and slice the red onion very thinly.
  • In a large mixing bowl, combine the sliced cucumbers and onions.
  • In a separate bowl, mix together the sour cream (or yogurt), apple cider vinegar, sugar, salt, and pepper.
  • Pour the dressing over the cucumber and onion mixture and gently toss until everything is well-coated.
  • Cover and let it chill in the refrigerator for at least 30 minutes.

Notes

Customize your salad by adding cherry tomatoes or using a dairy-free substitute for the dressing. It keeps well in the fridge for a couple of days, making it perfect for meal prep.
