  • 2 tablespoons olive oil For sautéing

  • 1 teaspoon smoked paprika Adds depth and smokiness
  • 4 cups vegetable broth Can substitute with chicken broth
  • 2 cans chickpeas, drained and rinsed Provides protein and texture
  • 2 cups fresh spinach Can use any leafy green
  • to taste Salt and pepper Enhances flavor
  • to taste Fresh lemon juice Brightens the soup

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions and sauté for about 5 minutes until softened and golden.
  • Stir in the minced garlic and cook for an additional 1-2 minutes.
  • Add the ground cumin and smoked paprika, stirring for about a minute to let the spices bloom.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Add the chickpeas and reduce the heat to a simmer, cooking for 10-15 minutes.
  • Stir in the fresh spinach and let it wilt for a couple of minutes.
  • Finally, season with salt, pepper, and fresh lemon juice before serving.

Notes

Feel free to customize the soup by adding different leafy greens or spices. To make it creamy, blend half of the soup. Add red pepper flakes for a spicy kick.
