Ingredients
  

Lobster Tails

  • 4 pieces lobster tails, thawed if frozen

Garlic Butter Sauce

  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika adds smokiness
  • to taste salt and pepper

Garnish

  • to taste fresh parsley for garnish

Instructions
 

Preparation

  • Preheat your grill to medium-high heat (about 375°F to 400°F).
  • Use kitchen scissors to carefully cut through the top shell of each lobster tail lengthwise, exposing the lobster meat.
  • In a small bowl, mix together the melted butter, minced garlic, lemon juice, smoked paprika, and a pinch of salt and pepper.

Grilling

  • Place the lobster tails on the grill, meat side up. Brush them generously with the garlic butter mixture.
  • Grill the tails for about 8-10 minutes, or until the lobster meat is opaque and cooked through. The target temperature should be 130°F.
  • Halfway through grilling, brush them again with the garlic butter sauce. Optionally, flip them over for the last minute for a bit of char.

Serving

  • Remove the lobster tails from the grill and garnish with fresh parsley. Serve with extra garlic butter on the side.

Notes

Keep an eye on the lobster tails to avoid overcooking. For a spicy kick, add a pinch of red pepper flakes to the garlic butter. These tails pair well with a fresh green salad or buttery corn on the cob.
