Garlic Butter Beef Bites with Potatoes

  • 1 pound beef sirloin, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter divided use
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped for garnish

Preparation

  • Bring a pot of salted water to a boil. Add the baby potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.
  • Season the beef bites with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the beef bites and sear for about 3-4 minutes until they’re golden brown. Remove from the skillet.
  • In the same skillet, add another 2 tablespoons of butter and the minced garlic. Sauté for about 30 seconds until aromatic.
  • Add the cooked potatoes back into the skillet with the garlic butter, coating well. Toss the beef bites back into the pan and stir everything for about 1-2 minutes.
  • Remove from heat, sprinkle with fresh parsley, and serve.

Notes

Let the beef sear well for a tasty crust. Feel free to add herbs like rosemary or thyme for extra flavor. Multitasking while cooking can save you time.
