Fried Apple or Peach Pies

Ingredients
  

For the Dough

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water

For the Filling

  • 2 cups apples or peaches, peeled, cored, and chopped
  • 1/2 cup sugar adjust based on your fruit's sweetness
  • 1 teaspoon cinnamon because cinnamon makes everything better!
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch to thicken it up

For Frying

  • to cover pies vegetable oil you'll need enough to cover the pies while frying

Instructions
 

Make the Dough

  • In a large bowl, mix the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Gradually mix in the cold water until the dough comes together. Gather into a ball, wrap in plastic wrap, and refrigerate for about 30 minutes.

Prepare the Filling

  • In a medium bowl, combine the chopped apples or peaches, sugar, cinnamon, lemon juice, and cornstarch. Stir well to ensure the fruit is coated.

Shape the Pies

  • Once your dough is chilled, roll it out on a lightly floured surface to about 1/8 inch thick. Cut circles with a 5-6 inch diameter.
  • Place a tablespoon of the filling on one half of each dough circle. Fold the other half over and seal the edges by crimping them with a fork.

Fry Away

  • In a deep skillet or pot, heat enough vegetable oil to submerge the pies (about 3 inches deep) over medium heat.
  • Carefully drop in a few pies at a time, frying each side for about 2-3 minutes or until golden brown. Remove and place on paper towels to drain any excess oil.
  • Dust them with powdered sugar if you’re feeling fancy and serve warm.

Notes

Chilling the dough before rolling is key for a flakier crust. Use fresh fruit for better flavor, and feel free to experiment with spices like nutmeg or ginger.
