  • 2 cups peeled and diced apples Granny Smith works great!
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans optional, but they add a nice crunch!

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 10-inch bundt pan or a regular cake pan.
  • In a large bowl, whisk together the flour, baking soda, cinnamon, and salt. Set this aside.
  • In another bowl, beat together the granulated sugar, brown sugar, and vegetable oil until smooth.
  • Add the eggs one at a time, mixing well, followed by the vanilla extract.
  • Gradually add the flour mixture to your wet ingredients, mixing gently until just combined.
  • Fold in the diced apples and nuts, if using.

Baking

  • Pour the batter into your prepared pan and bake for about 50-60 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  • Serve with a sprinkle of powdered sugar on top if desired.

Notes

Mix different apple varieties for added flavor. Resist cutting the cake while warm for better slicing. Store leftovers in an airtight container at room temp for up to three days.
