Ingredients
  

For the Meatloaf

  • 1.5 lbs 1 1/2 lbs ground beef You can use ground turkey for a lighter option.
  • 1 cup 1 cup breadcrumbs Panko works great for texture.
  • 1 medium 1 medium onion, finely chopped
  • 2 cloves 2 cloves garlic, minced
  • 1 large 1 large egg
  • 1 cup 1 cup shredded Swiss cheese Additional cheese can be added before serving.
  • 0.25 cup 1/4 cup beef broth
  • 1 tablespoon 1 tablespoon Worcestershire sauce
  • 1 teaspoon 1 teaspoon salt
  • 0.5 teaspoon 1/2 teaspoon pepper
  • 0.5 teaspoon 1/2 teaspoon thyme

For the Topping

  • 1 cup 1 cup caramelized onions Store-bought can be used for convenience.
  • 1 cup 1 cup shredded Swiss cheese

Instructions
 

Preparation

  • Caramelize the onions by cooking them in a bit of butter or oil over medium heat until golden brown, approximately 15-20 minutes.
  • In a large bowl, combine ground beef, breadcrumbs, chopped onions, minced garlic, egg, Swiss cheese, beef broth, Worcestershire sauce, salt, pepper, and thyme. Mix until just combined.
  • Shape the mixture into a loaf shape.

Cooking

  • Place the shaped meatloaf into the slow cooker. Top with caramelized onions and sprinkle more Swiss cheese on top.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • A few minutes before serving, add an additional cup of Swiss cheese on top and cover until melted.

Notes

If you prefer a stronger onion flavor, add a splash of onion soup mix to the meat mixture. Leftover meatloaf makes great sandwiches the next day.
