  • 2 lbs beef short ribs
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup dry red wine
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 baguette, sliced (for croutons)
  • 1.5 cups Gruyère cheese, shredded

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season your short ribs with salt and pepper, then brown them on all sides.
  • Once the ribs are browned, remove them from the pot and set them aside. In the same pot, add the sliced onions. Sauté them slowly for about 20-25 minutes until they are caramelized and fragrant.
  • Stir in the minced garlic for a minute, then pour in the red wine, scraping the bottom of the pot.
  • Return the short ribs to the pot, add the beef broth, thyme, and bay leaf. Bring to a boil, then lower the heat and let it simmer for about 2-3 hours.
  • Once the soup is ready, taste and adjust seasoning as needed. Preheat your oven to broil. Place baguette slices on a baking sheet, top with Gruyère cheese, and broil until bubbly and golden.
  • Ladle the soup into bowls and top with a cheesy crouton.

Notes

This soup can be made ahead and reheated before serving. Take your time caramelizing the onions for the best flavor. Don't skip the cheesy croutons for added texture.
