  • 1 small head purple cabbage, finely shredded
  • 2 medium carrots, julienned (or use a grater if that’s more your style)

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar

Preparation

  • Grab that trusty knife (or food processor) and shred your green and purple cabbage. Toss in those julienned carrots.

Dressing

  • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, celery salt, salt, and pepper until smooth.

Mix It Up

  • Pour the dressing over your shredded veggies and toss until everything is nicely coated.
  • If you’re feeling adventurous, add the fresh herbs for an added layer of flavor.

Chill and Serve

  • Cover your coleslaw and let it chill in the fridge for at least 30 minutes.

Notes

Keep the dressing separate until right before serving to maintain the crunch of the veggies. For a spicy kick, add diced jalapeños.
