  • 3-4 pounds pork loin roast
  • 2 cups apple cider
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons Dijon mustard
  • 1 teaspoon rosemary (fresh or dried)
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper, to taste
  • 1 cup apple slices any variety you like

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a large oven-safe skillet, heat a bit of oil over medium-high heat. Season the pork roast with salt and pepper, then sear it on all sides until golden brown, about 4-5 minutes per side.
  • Remove the pork roast from the skillet, and sauté the onion and garlic until translucent in the same pan.
  • Mix in the apple cider, Dijon mustard, rosemary, and thyme. Place the seared pork back in the skillet and pour any remaining juices over the top. Nestle the apple slices around the roast.

Cooking

  • Cover with a lid or aluminum foil and roast the pork for 2-2.5 hours, or until it reaches an internal temperature of 145°F (63°C). Baste with the cider glaze occasionally.
  • Once cooked, let the pork rest for about 15 minutes before slicing.

Notes

Don’t worry if the sauce looks a bit lumpy; just give it a good stir before serving. Feel free to experiment with herbs like sage or even a touch of cinnamon for a twist. Leftovers can be shredded for sandwiches or salads.
