  • 1 pie crust 1 pre-made pie crust Use whichever type you fancy.

Filling

  • 1 cup ricotta cheese Use creamy ricotta for richness.
  • 1 cup fresh spinach, chopped Frozen spinach is acceptable; just thaw and drain first.
  • 3 large eggs Large eggs are preferable.
  • 1 cup milk Whole or 2% milk recommended.
  • 1/2 cup grated Parmesan cheese Adds flavor and texture.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground gives the best flavor.
  • a pinch nutmeg Optional, but enhances the flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the pie crust in a 9-inch pie dish and press it into the sides.
  • In a large bowl, whisk together the eggs, ricotta cheese, and milk until smooth.
  • Gently fold in the chopped spinach, Parmesan cheese, salt, black pepper, and nutmeg.
  • Carefully pour the filling mixture into the prepared crust.
  • Bake for 35-40 minutes, or until the top is golden and the center is set.
  • Let the quiche cool for about 10 minutes before slicing and serving.

Notes

For extra flavor, consider sautéing onions or garlic with the spinach before mixing. This dish is great for meal prep and can be stored in the fridge for up to three days.
