Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened

For the custard filling

  • 1 cup milk Can substitute with almond milk.
  • 1/2 cup sugar
  • 3 large egg yolks
  • 3 tablespoons cornstarch
  • 1 tablespoon vanilla extract
  • 2 tablespoons unsalted butter

For the chocolate glaze

  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon unsalted butter

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.

Make the Crust

  • In a mixing bowl, whisk together the flour and powdered sugar. Fold in the softened butter until combined and crumbly. Pour into the greased baking dish and press down evenly. Bake for about 15 minutes until golden and set.

Prepare the Custard Filling

  • In a saucepan over medium heat, whisk together the milk, sugar, egg yolks, and cornstarch. Stir continuously until thickened, about 5-7 minutes. Remove from heat and stir in the vanilla extract and butter until fully melted.

Layer the Bars

  • Pour the custard filling over the baked crust, smoothing it out. Return the dish to the oven for another 10-12 minutes.

Create the Chocolate Glaze

  • In a microwave-safe bowl, combine chocolate chips and butter. Heat in 30-second intervals, stirring in between, until melted and smooth. Drizzle over the custard layer.

Chill and Serve

  • Allow to cool at room temperature then refrigerate for at least two hours before slicing into bars.

Notes

For clean slices, dip your knife in warm water before cutting. If your custard looks lumpy, whisk while cooking to smooth it out.
