  • 3 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon instant yeast
  • 1 1/2 cups lukewarm water

Mixing the Dough

  • In a large bowl, combine the flour, salt, and instant yeast. Stir until evenly mixed.

Incorporating Water

  • Pour in the lukewarm water and stir your mixture until it's well combined. The dough will look shaggy.

The Resting Period

  • Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature for 12 to 18 hours.

Shaping the Dough

  • After the waiting period, sprinkle some flour on a clean surface and turn your dough out onto it. Shape it into a ball without kneading.

Second Rise

  • Place the dough seam-side down on a piece of parchment paper and cover it with a towel. Let it rise for 1 to 2 hours.

Baking

  • Preheat your oven to 450°F (230°C) about 30 minutes before baking. Place a Dutch oven in the oven while it heats.
  • Carefully remove the hot pot, lift the parchment paper with the dough, and place it into the pot. Cover with the lid and bake for 30 minutes.
  • Remove the lid and bake for an additional 15-20 minutes until golden brown.

Cooling and Slicing

  • Remove the bread from the pot and let it cool on a rack. Once cooled, slice it up.

Notes

If your dough seems too wet, add a tiny bit more flour during the mixing stage. You can also add herbs, cheese, or nuts for added flavor.
