  • 2 pieces boneless, skinless chicken breasts Tenderized to about 1/2 inch thick
  • Salt and pepper To taste
  • ½ cup flour For dredging
  • 3 tablespoons olive oil For searing the chicken
  • 3 tablespoons butter For making the sauce
  • 1 cup low-sodium chicken broth For the sauce
  • ½ cup fresh lemon juice For flavor
  • ¼ cup capers For flavor
  • Fresh parsley, chopped For garnish

Preparation

  • Tenderize the chicken breasts between two sheets of plastic wrap until about 1/2 inch thick.
  • Season both sides with salt and pepper and dredge each breast in flour, shaking off excess flour.

Cooking

  • In a large skillet over medium-high heat, heat the olive oil until hot.
  • Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown and cooked through.
  • Remove chicken from the pan and place it on a plate to rest.

Making the Sauce

  • In the same skillet, melt the butter.
  • Add the chicken broth, lemon juice, and capers, stirring to combine and let the sauce simmer for about 3-5 minutes.

Combining Everything

  • Return the chicken to the skillet and allow to soak up the flavors for about 2-3 minutes.
  • Garnish with freshly chopped parsley before serving, if desired.

Notes

For added flavor, consider adding a splash of white wine to the sauce. Serve with pasta or steamed vegetables for a complete meal. Leftovers can be stored in an airtight container in the refrigerator for up to two days.
