Ingredients
  

Sushi Rice

  • 2 cups sushi rice
  • 2.5 cups water

Main Ingredients

  • 1 lb imitation crab meat the star of the show
  • 1 whole avocado, sliced
  • 1 whole cucumber, julienned
  • 0.5 cup scallions, chopped
  • 0.5 cup nori sheets, cut into strips

Sauce

  • 0.25 cup soy sauce or tamari for gluten-free option
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • to taste sesame seeds for garnish

Instructions
 

Preparation

  • Rinse the sushi rice under cold water until the water runs clear.
  • Add the rinsed rice and water to a rice cooker or a saucepan. If using a saucepan, bring to a boil, then cover and simmer on low for about 18-20 minutes.
  • Allow the rice to cool slightly.
  • Mix the soy sauce, rice vinegar, and sugar in a small bowl until the sugar dissolves.

Assembly

  • In individual bowls, add a generous scoop of cooked sushi rice.
  • Top it off with pieces of imitation crab, avocado slices, julienned cucumber, and scallions.
  • Drizzle the sauce over the top and finish with sesame seeds and nori strips.

Notes

You can mix in any leftovers or additional veggies from your fridge. This dish is versatile and can be prepped ahead for time-saving during busy weeks.
