  • 1 lb ground beef Can substitute with ground turkey for a leaner option.
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese Cheddar or Mexican blend is best.
  • 1 cup iceberg lettuce, chopped
  • 1 can black beans Rinsed and drained.
  • 1 cup corn Can be frozen, fresh, or canned.
  • ½ cup diced red onion
  • ½ cup salsa Choose mild, medium, or spicy.
  • ½ cup sour cream Can substitute with Greek yogurt for a healthier twist.

Instructions
 

Preparation

  • In a skillet over medium heat, cook the ground beef until it’s no longer pink, about 5-7 minutes. Stir in the taco seasoning per package instructions.
  • While the beef cooks, chop the lettuce, halve the cherry tomatoes, and dice the red onion.

Mixing

  • In a large bowl, combine the lettuce, black beans, corn, cherry tomatoes, and the cooked beef. Add in the diced onions.
  • Sprinkle the shredded cheese over the top.
  • Crush some Doritos and sprinkle them generously over the salad just before serving.
  • Drizzle with salsa and top with dollops of sour cream. Toss everything gently to combine.

Serving

  • Scoop onto plates or bowls and enjoy!

Notes
