Ingredients
  

Dry Ingredients

  • 2 cups almond flour You can use other nut flours if you prefer.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/3 cup coconut oil Melted.
  • 1/2 cup honey or maple syrup Your choice.
  • 1 teaspoon vanilla extract

Mix-Ins

  • 1 cup dark chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the almond flour, baking soda, and salt. Stir until well mixed.
  • In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract.
  • Slowly add the wet ingredients to the dry ingredients and stir until everything is nicely combined.
  • Stir in the dark chocolate chips.
  • Use a tablespoon to drop dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough in the refrigerator for about 30 minutes before baking. You can also substitute almond flour with coconut flour but reduce the amount slightly. Keep an eye on the cookies to avoid overbaking!
