  • 1 pound Shrimp, peeled and deveined Fresh or frozen works!
  • 1 tablespoon Fajita seasoning For flavor boost.
  • 8 small Flour tortillas Mini burrito vibes.
  • 2 cups Alfredo sauce Homemade or store-bought.
  • 2 cups Shredded mozzarella cheese Or your cheesy favorite.
  • Enough Oil for frying Let your inner chef shine!
  • Optional Fresh parsley for garnish A pop of green for presentation.

Preparation

  • In a skillet over medium heat, toss your shrimp with the fajita seasoning. Cook until the shrimp turn pink and are opaque, around 3 to 5 minutes. Avoid overcooking unless you fancy a chewing workout.
  • Lay your tortilla on a flat surface, and spoon a dollop of Alfredo sauce in the center. Add a generous helping of shrimp and a sprinkle of mozzarella. Fold the edges over and roll it up burrito-style.

Cooking

  • Heat oil in a deep pot or fryer until it shimmers (about 350°F). Carefully drop your burrito bites into the hot oil, frying them until golden brown and crispy, about 3-4 minutes.
  • Remove them and place on paper towels to drain any excess oil. Sprinkle some fresh parsley on top before serving.

Notes

Don't skip the seasoning! A little kick can elevate the dish. You can use leftover shrimp or experiment with other fillings.
