Ingredients
  

For the crust

  • 1.5 cups crushed chocolate cookies You can use any chocolate cookie you prefer.
  • 0.5 cup unsalted butter, melted Ensure the butter is fully melted before mixing.

For the cheesecake filling

  • 16 oz cream cheese, softened Make sure the cream cheese is at room temperature for easy mixing.
  • 1 cup sugar Granulated sugar works best.
  • 3 large eggs Add eggs one at a time.
  • 1 tsp vanilla extract Pure vanilla extract is recommended for best flavor.
  • 0.5 cup sour cream Adds creaminess to the filling.

For the topping

  • 1 cup caramel sauce Store-bought or homemade, depending on preference.
  • 6 pieces fun-sized Twix bars, chopped Chop the bars into small pieces.
  • Shaved chocolate for garnish (optional) Use dark or milk chocolate as preferred.

Preparation

  • Preheat your oven to 350°F (175°C). In a bowl, mix the crushed chocolate cookies with the melted butter until well combined. Press this mixture firmly into the bottom of a springform pan.
  • Bake for about 10 minutes, then let it cool while you prepare the filling.

Mixing and Baking

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add in the eggs one at a time, ensuring each is well incorporated. Stir in the vanilla extract and sour cream until everything is creamy and luscious.
  • Pour the filling over the cooled crust, smoothing the top with a spatula. Bake for about 50-55 minutes or until the center is set but slightly jiggly.
  • Turn off the oven, crack the door, and let it cool inside for an hour.

Chilling and Topping

  • Once it’s cooled at room temperature, transfer the cheesecake to the fridge for at least 4 hours, or preferably, overnight for that perfect texture.
  • Once cooled, drizzle the caramel sauce over the top and sprinkle the chopped Twix bars generously. Top with shaved chocolate if you’re feeling fancy.

Notes

Take time to let the cheesecake cool in the oven to prevent cracks. Feel free to add nuts for extra crunch, and store leftovers in an airtight container in the fridge.
