Ingredients
  

Salad Ingredients

  • 2 large cucumbers Washed and sliced into half-moons.
  • 2 cups cherry or grape tomatoes Halved, or chopped if larger tomatoes are used.
  • 1 medium red onion Thinly sliced.
  • 1/4 cup fresh parsley Chopped.

Dressing Ingredients

  • 1 large lemon Juiced.
  • 2 tablespoons olive oil For dressing.
  • to taste salt and pepper For seasoning.

Preparation

  • Wash the cucumbers and tomatoes. Slice the cucumbers into half-moons and cut the cherry tomatoes in half.
  • Place the cucumbers and tomatoes in a large mixing bowl.
  • Thinly slice the red onion and chop the fresh parsley. Add both to the bowl with the cucumbers and tomatoes.

Making the Dressing

  • In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the vegetable mixture.

Serving

  • Gently toss the salad to combine, ensuring all the veggies are coated in the dressing.
  • Let the salad sit for about 10 minutes to allow the flavors to meld, then serve fresh.

Notes

For added crunch, prepare the dressing separately and add just before serving. Consider adding diced bell peppers or feta cheese for variation.
