  • 3 medium medium carrots, grated
  • 1 large large apple (preferably Honeycrisp or Fuji), diced
  • ½ cup raisins (or your favorite dried fruit)
  • ¼ cup chopped walnuts (optional) Highly recommended for crunch!

Dressing

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey or maple syrup Use maple syrup for a vegan option.
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Grate the carrots using a box grater or food processor.
  • Dice the apple into bite-sized pieces.

Mixing

  • In a large mixing bowl, combine the grated carrots, diced apple, raisins, and walnuts.

Dressing and Serving

  • In a small bowl, whisk together the lemon juice, honey, and olive oil. Pour the dressing over the salad and toss gently until coated.
  • Season with a sprinkle of salt and pepper, then toss again.
  • Serve immediately or let it sit in the fridge for about 30 minutes to allow the flavors to meld.

Notes

For a zesty twist, add chopped mint or cilantro. If you prefer, substitute walnuts with pecans. Pre-grated carrots can save time.
