  • 4 medium sweet potatoes, peeled and diced Ensure they're cut into bite-sized pieces.
  • 1/2 cup brown sugar Can substitute with maple syrup.
  • 1/4 cup unsalted butter, melted Melt before mixing.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows Added towards the end for gooey texture.
  • 1/2 cup pecans or walnuts (optional) Adds crunch to the dish.

Preparation

  • Peel and dice the sweet potatoes into bite-sized pieces.
  • In a mixing bowl, combine the diced sweet potatoes, brown sugar, melted butter, cinnamon, and nutmeg. Toss well.

Cooking

  • Pour the mixture into the crockpot and spread it evenly. If using, sprinkle nuts on top.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the sweet potatoes are tender.
  • About 15 minutes before serving, sprinkle mini marshmallows on top. Cover to let them melt.

Serving

  • Serve warm and enjoy as your family goes for seconds.

Notes

For an extra touch, add a splash of vanilla extract with other ingredients. Store leftovers in an airtight container in the fridge for 3-4 days; reheat gently with a splash of water.
